Kumamoto oyster

Since the early days of the 20th Century, US West Coast oyster growers started culturing seed of a small and delicious oyster from Southern Japan. This oyster (Crassostrea gigas var. sikamea) is native to Ariake Bay, in Kumamoto Prefecture, on the Island of Kyush. Towards the 1970’s this oyster became almost extinct due to its overexploitation in the Sea of Ariake. At present it has become rather scarce throughout Japan and today it is a rare delicacy in Japan. |

With the resurgence of interest in half-shell oysters among the American public, the Kumamoto was introduced into traditionally important raw bar markets throughout the United States. Now-a-days, the Kumamoto oyster has become the reigning queen of the half-shell trade.
Since a few years back, this delicious oyster has drawn the attention of Sol Azul, since our farm lies at exactly the same latitude than that of Kyushu Island, the original cradle of the Kumamoto oyster. The result is a product of the highest quality, being shipped to Japan where the most demanding consumers palate and greatly appreciate its taste. |
