Sol Azul strives to produce the finest and freshest oysters, warranting consumers of their sanitary quality and their delicious taste.
Our culture and packing procedures meet the stringent sanitary requirements of the joint US-Mexican National Shellfish Sanitation Program under both the Food and Drug Administration and the Ministry of Health. The former guarantees the sanitary quality of the oysters as they are absolutely free of pathogens and pollution.
Additionally, as a raw shellstock shipper, Sol Azul has adopted strict hygienic and sanitary procedures in conformance with the standards of the HACCP Seafood Inspection Program of the F.D.A and the equivalent Mexican official Norms.
In turn, the “Sol Azul” oyster has been certified as an Organic Product by Bioagricert/IFOAM.
These certificates imply a very strict monitoring of the quality of seawater as well as of the selection and packaging procedures. Among other parameters, phytoplankton populations are monitored twice per week to detect the potential presence of bio-toxins; the bacteriological quality of the water and product is continuously analyzed for total coliforms, faecal coliforms, salmonella, E. coli, Vibrio cholerae, Vibrio paraemolyticus, etc. Thanks to the extremely high quality of our growing waters, none of the above mentioned pathogens have ever been detected throughout 15 years of uninterrupted monitoring.
