Founded in 1994, Sol Azul is Mexico’s largest controlled producer and exporter of the Pacific oyster (Crassostrea gigas) and the Kumamoto variety, specifically grown for the fresh or ‘half-shell’ domestic and international markets, with a yearly production capacity of 500 tones.

Its facilities are located on the western coast of the Baja California Peninsula within the ‘El Vizcaino’ Biosphere Reserve and include 10 Ha of access coastal land bordering the lagoon and overseeing the 200 Ha of intertidal flats where the off-ground oyster culture racks are laid.  It is a remote site, free of any sources of pollution, ideally suited for the sustainable culture of bivalve mollusks due to its excellent water and soil quality conditions, temperature, tidal range, water currents, shelter, etc.

The marketing and production results of a pilot-scale phase developed at the El Cardón Estuary and at the Manuela Lagoon, conducted according to the proprietary technology of “Sol Azul”, served as the basis upon which the commercial-scale operation was implemented, thus taking into consideration local factors that affect production.

 
 

"Sol Azul” possesses the technology that allows year round production of the freshest and finest export-quality oysters, selectively bred from choice cultured stock, homogeneous in size, shape and taste, as well as resistant to post-harvest handling and transportation.
