Scrub the oyster shells clean under cold running water. Open the oysters, drain and place on a tray with rock salt to hold them steady.
Pour a little white wine over each oysters. Season with salt and pepper. Bake for 3-5 min at 200ºC. The oysters should become whitish or yellow (precooked).
Take away from oven and add a spoonful of cream over each one.
Add the cheeses and bake for another 3 min. A teaspoon of butter over each oyster will turn to a golden color. Serve hot and add a few lemon drops when serving.
Suggested wine: Chardonnay or Sauvignon blanc, very cold |
