When you receive your Sol Azul oysters, please open the ice chest and remove the waxed box containing the oysters. Without turning over the box nor removing the oysters, place the box under refrigeration at 37° - 45°F and protect from direct cold air currents.

 

If you need to take the oysters out of the box, make sure you place them carefully with their flat shell upwards, so that in case the oyster opens to breath, they retain their liquor. Keep oysters covered with a clean humid cloth.   Under these conditions, oysters should have a shelf life of at least a week
 

  • The oyster is marketed fresh, live in-the-shell and is classified by size (live weight in shell) as follows:
 
Size Length of shell Weight /piece
Small:  3.0”  –   3.5” 70  -   90 gr.
Medium:  3.5”  –  4.0”  90   - 110 gr.
Large:  4.0”   5.0”  110  -130 gr.
