Both, the “El Cardón” and the "Manuela" coastal lagoons, off the west coast of Baja California were chosen for the location of the aquaculture facilities of “Sol Azul”. These lagoons are situated within the El Vizcaino Biosphere Reserve. It is a remote site, free of any sources of pollution, ideally suited for the culture of bivalve mollusks due to its excellent water and soil quality conditions, temperature, tidal range, water currents, shelter, etc. |

Both sites are complementary in terms of production: nursing of seed and pre-growth takes place in Laguna Manuela, while on-growth till harvest is carried out at El Cardón, where the packaging plant is also located.
The physical infrastructure was constructed in conformance to strict ecological restrictions on 10 Ha of access coastal land bordering the lagoon and overseeing the 200 Ha of intertidal flats where the oyster culture racks are laid. The supporting facilities include, a water-blast cleansing area, packaging plant (conveyor belt, sorting table, mechanical grader and automatic weighing scale), field-support laboratory, storeroom, office, dressing and restrooms, kitchen and refectory, watchman and manager living quarters, electric generator and tools rooms, fresh water storage tanks and an ecological septic sewage treatment plant, etc. Oysters are dispatched by refrigerated truck. The packaging plant, as part of the overall production process, operates under a strict HACCP Plan in conformance to the Seafood Inspection Program of the FDA and the National Marine Fisheries Service of the U.S.
